Why does a new website need social media profiles?

Because you want to get cited in LLMS and rank in Google...

If you just launched a website, and it has no external validation in form of backlinks or social media, why should llms trust you? Why should Google?

Social media, and especially consistent posting acts as the first layer of entity establishment. 

The LLMs will start to trust you more, the second they see some of your posts ranking in Google, Bing, Brave etc..

And social media posts ranking in Google, is the direct consequence of consistent posting...
